Spice up dinner with grilled chicken stuffed with jalapenos and cheese.
Ingredients:
  • 3 medium jalapeno peppers
  • 0.5 cup shredded Monterey Jack cheese
  • 0.5 small onion, chopped
  • 2 ounces cream cheese, softened
  • 0.25 teaspoon ground cumin
  • 4 (5 ounce) skinless, boneless chicken breast halves
  • cooking spray
  • salt to taste
Instructions:
  • Heat your outdoor grill to medium temperature and gently grease the grate with oil.
  • Arrange jalapeno peppers on a microwave-safe plate and microwave until tender, for 1 to 2 minutes. Discard seeds and chop peppers.
  • Combine diced peppers, creamy Monterey Jack cheese, onion, flavorful cream cheese, garlic, and aromatic cumin in a bowl.
  • Carefully create a pocket in each chicken breast by making a vertical slit in the top center, starting 1/2 inch from each edge. Then, cut horizontally in both directions from the vertical slit to form a pocket.
  • Divide the pepper-cheese mixture evenly among the chicken breasts, pressing it onto each one. Secure the breasts closed with toothpicks. Give the chicken breasts a light coating of cooking spray and season with salt.
  • Grill chicken for 12 minutes with toothpicks facing up, then flip and cook until no longer pink inside and juices run clear, about 3-5 minutes. Ensure chicken reaches 165°F (74°C) with a meat thermometer. Remove toothpicks before serving.
