Stuffed Mushrooms with Sour Cream

Air fried bacon and vegetable stuffed mushrooms with sour cream and cheese - simple, elegant appetizer.
Ingredients:
  • 24 mushrooms, caps and stems diced
  • 0.5 orange bell pepper, diced
  • 0.5 onion, diced
  • 1 small carrot, diced
  • 2 slices bacon, diced
  • 1 cup shredded Cheddar cheese
  • 0.5 cup sour cream
  • 1.5 tablespoons shredded Cheddar cheese, or to taste
Instructions:
  • In a skillet over medium heat, sauté mushroom stems, orange bell pepper, onion, carrot, and bacon until softened, for about 5 minutes. Mix in 1 cup of Cheddar cheese and sour cream, and cook until the stuffing is well combined and the cheese has melted, approximately 2 minutes.
  • Preheat air fryer to 350°F (175°C) for that perfect crispy finish.
  • Place mushroom caps neatly on the baking tray. Fill each cap generously with stuffing. Sprinkle 1 1/2 tablespoons of Cheddar cheese over the top.
  • Place the mushrooms on the air fryer basket and cook until the cheese is melted, approximately 8 minutes.
