Savory spinach, bacon, and Parmesan stuffed mushrooms baked to perfection - a party favorite!
Ingredients:
  • 5 slices bacon
  • 1 (10 ounce) package frozen chopped spinach
  • 12 large mushrooms
  • 3 tablespoons butter
  • 2 tablespoons finely chopped onion
  • 2 cloves garlic, peeled and minced
  • 0.333 cup heavy cream
  • 1 tablespoon heavy cream
  • 0.25 cup grated Parmesan cheese
  • 2 tablespoons butter, melted
Instructions:
  • Preheat the oven to 400 degrees F (200 degrees C), then generously butter a 9x13-inch baking dish.
  • In a large, deep skillet, crisp up the bacon over medium-high heat until perfectly browned for about 10 minutes. Once done, crumble it and set aside.
  • Place the frozen spinach in a medium saucepan with 1/4 cup of water. Bring to a boil, then reduce the heat to medium, cover, and cook for 10 minutes. Stir, remove from heat, and drain.
  • Separate mushroom caps from stems. Place caps in baking dish. Finely chop the stems.
  • In a medium saucepan over medium heat, melt 3 tablespoons of butter. Sauté onions and garlic until onions are translucent, about 5 minutes. Add spinach, bacon, and mushroom stems, then pour in 1/3 cup plus 1 tablespoon of cream and bring to a boil. Remove from heat and stir in Parmesan, salt, and pepper.
  • Fill mushroom caps abundantly with the spinach mixture and then generously drizzle 2 tablespoons of melted butter on top.
  • Bake in the oven until golden brown, approximately 30 minutes.
