Savory ground beef and rice baked inside colorful peppers for a quick twist on a comfort food favorite.
Ingredients:
  • 1 pound ground beef
  • 1 (10.75 ounce) can tomato soup (such as Campbell's®)
  • 1 (14.1 ounce) can diced tomatoes, undrained
  • 1.25 cups water, or more as needed
  • 0.5 cup white rice
  • 1 tablespoon Worcestershire sauce
  • 0.5 teaspoon Italian seasoning
  • salt and freshly ground black pepper to taste
  • 4 medium bell peppers, diced
  • 0.5 cup shredded mozzarella cheese
Instructions:
  • In a large skillet, sauté ground beef and onion over medium heat until onion is soft and translucent, about 7 to 8 minutes. Stir in garlic and cook until fragrant, about 30 to 45 seconds. Remove any excess grease.
  • Combine tomato soup, diced tomatoes, water, rice, Worcestershire sauce, Italian seasoning, salt, and pepper in a pot. Bring to a boil, then simmer covered on low for 10 minutes.
  • Combine the diced peppers and cook until the rice is tender, for about 15 to 20 minutes. Sprinkle with mozzarella cheese, cover, and allow the cheese to melt for 5 to 7 minutes.
