Indulge in the perfect combination of cookies and cheesecake with cream cheese-filled sugar cookie cups.
Ingredients:
  • 0.5 cup butter
  • 0.5 cup white sugar, or more as needed, divided
  • 1 egg
  • 0.5 teaspoon vanilla extract
  • 1.5 cups all-purpose flour
  • 2 tablespoons all-purpose flour
  • 0.5 teaspoon baking powder
  • 0.25 teaspoon baking soda
  • 0.25 teaspoon salt
  • 1 (8 ounce) package cream cheese
  • 0.25 cup white sugar
  • 2 tablespoons white sugar
Instructions:
  • Preheat the oven to 350 degrees F (175 degrees C) and prepare 18 cupcake cups with paper liners.
  • Combine butter, sugar, egg, and vanilla extract in a mixing bowl and mix with an electric mixer until smooth.
  • Combine 1 1/2 cups plus 2 tablespoons flour, baking powder, baking soda, and salt in a separate bowl. Add to butter mixture and mix until combined.
  • Spoon 1 teaspoon of batter into each cupcake cup. Lightly sprinkle with sugar.
  • Bake until golden in the preheated oven for about 10 minutes. Take out of the oven and gently indent each cup using a teaspoon-sized measuring spoon. Allow to cool for 10 minutes.
  • Once the cookie cups have cooled, blend together cream cheese, 1/4 cup plus 2 tablespoons sugar, and egg with an electric mixer until smooth. Fill each cookie cup with slightly over 1 teaspoon of the filling mixture and then sprinkle with sugar.
  • Place the dish in the oven and bake until the filling is beautifully set, which should take an additional 10 to 15 minutes. Allow it to cool entirely before indulging in its delightful flavors.
