Sugar Cookie-Berry Crisps

Indulge in a heavenly strawberry-raspberry crisp topped with sugar cookie perfection.
Ingredients:
  • 2 cups Gold Medal™ all-purpose flour
  • 1 1/2 teaspoons baking powder
  • 1/8 teaspoon salt
  • 3/4 cup butter, softened
  • 3/4 cup granulated sugar
  • 1 egg
  • 3 cups halved fresh strawberries
  • 3 cups fresh raspberries
  • 1/3 cup granulated sugar
  • 1/4 cup Gold Medal™ all-purpose flour
  • 2 tablespoons coarse sugar
Instructions:
  • Combine 2 cups of flour, baking powder, and salt in a medium bowl. In a large bowl, cream butter and 3/4 cup of granulated sugar with an electric mixer until fluffy. Mix in the egg, then add the flour mixture and blend until just combined. Shape the dough into a ball, flatten slightly, wrap in plastic wrap, and chill in the refrigerator for at least 2 hours.
  • Preheat oven to 350°F and line a cookie sheet with foil. In a large bowl, combine strawberries, raspberries, 1/3 cup granulated sugar, and 1/4 cup flour. Divide mixture into 8 (8-oz) individual baking dishes. Crumble cookie dough over the berry mixture and sprinkle with coarse sugar. Arrange baking dishes on the prepared cookie sheet.
  • Bake for 35 to 40 minutes until the filling is bubbly and the topping is golden brown. Serve warm.
