Sugar Plum Baked Brie Bites: Baguette slices with Christmas sugar plum flavors topped with dried fruits, nuts, warm spices, and melted Brie for the ultimate holiday appetizer.
Ingredients:
  • 1/4 cup dried cranberries
  • 1/4 cup dried cherries
  • 6 dried plums (pitted prunes)
  • 1/2 cup raw walnut halves
  • 2 teaspoons orange zest
  • 2 tablespoons apricot jam
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon nutmeg
  • 1/4 teaspoon allspice
  • 1/8 teaspoon cardamom
  • 1/2 teaspoon kosher salt
  • 12 ounces brie cheese
  • 36 slices baguette
  • 2 tablespoons chopped fresh rosemary, optional
Instructions:
  • Prepare the sugar plum mixture by finely chopping dried cranberries, dried cherries, and dried plums. Combine the chopped fruit in a pile, add walnuts on top, and continue chopping until minced to your desired consistency. Transfer the mixture to a bowl.
  • Combine orange zest, apricot jam, cinnamon, nutmeg, allspice, cardamom, and salt; mix until well blended, adding extra jam if necessary for a cohesive mixture.
  • Preheat the oven to a toasty 450 degrees F (230 degrees C) and line 1 or 2 baking sheets with parchment paper or a Silpat baking mat as required.
  • Arrange the baguette slices on the sheet pans and generously spoon the delightful sugar plum mixture on top of each slice.
  • Slice the brie in half and then into 1/8-inch thick slices. Add enough cheese on each bite to cover the sugar plum topping, using smaller slices if necessary.
  • Place in the preheated oven until the cheese is melted with golden spots, approximately 12 minutes. Allow it to sit for a few minutes before serving.
  • Arrange the brie bites beautifully on a serving tray or board. Optionally, add a touch of extra chopped dried cranberries, then sprinkle with finely chopped rosemary before serving warm. These treats can be made in advance and are just as delightful at room temperature.
