Sugar snaps with herb and garlic butter

Ingredients:
  • 1kg sugar snap peas, trimmed
  • 1 garlic clove, finely chopped
  • 50g butter
  • 62.50 ml tarragon leaves, coarsely chopped
  • 82.50 ml coarsely chopped flat leaf parsley
Instructions:
  • Blanch sugar snap peas in salted boiling water until vibrant green and tender-crisp, about 2-3 minutes. Drain and place them back in the saucepan.
  • In a small saucepan over low heat, gently cook the butter and garlic until the butter melts, about 2 minutes. Pour this fragrant mixture over the sugar snap peas. Sprinkle with tarragon and parsley, then gently toss until well combined. Transfer to a serving bowl and enjoy.
