Sultana and almond couscous salad

Create a delicious, healthy holiday feast!
Ingredients:
  • 191.25 gm chicken style liquid stock
  • 1.25 gm ground cinnamon
  • 187.50 ml couscous
  • 85.00 gm sultanas
  • 1 small red onion, halved, thinly sliced
  • 2 x 400g cans chickpeas, drained, rinsed
  • 82.50 ml slivered almonds, toasted
  • 40.00 ml chopped fresh flat-leaf parsley leaves
Instructions:
  • In a large saucepan, bring the stock and cinnamon to a boil over high heat. Place couscous and sultanas in a large heatproof bowl. Pour the hot stock mixture over the couscous. Cover and let it stand for 3 to 5 minutes until the liquid is absorbed. Fluff the couscous with a fork to separate the grains.
  • Combine and savor the flavorful mixture of onion, chickpeas, almonds, parsley, and oil. Season with a pinch of salt and a dash of pepper. Stir well and indulge in your delicious creation.
