Tangy summer berry cordial made with fresh or frozen raspberries.
Ingredients:
  • 600 g raspberries
  • 2 lemons
  • 250 g golden caster sugar
Instructions:
  • In a medium saucepan over medium heat, combine raspberries with 300ml water. Use a speed peeler to add lemon zest to the pan. Simmer gently for 10 to 15 minutes, stirring occasionally until the raspberries break down (avoid boiling). Strain mixture through a muslin-lined sieve into a large bowl. Return liquid to the pan, mix in sugar and lemon juice. Stir until sugar dissolves over medium-low heat. Pour into a sterilized 1.2-liter bottle or jar. Dilute with water, soda, cava, or Prosecco before serving.
