Delicious breakfast platter with toasted muesli, vanilla labne, and fresh summer fruits, ideal for sharing with loved ones.
Ingredients:
  • 2 white peaches, cut into wedges
  • 2 plums, cut into wedges
  • 2 kiwifruit, sliced
  • 2 passionfruit, halved
  • 1 mango, cheeks scored, halved
  • 2 starfruit, sliced
  • 1kg plain Greek-style yoghurt
  • 49.50 gm icing sugar mixture, sifted
  • 2 tsp vanilla bean paste
  • 0.60 gm salt
  • 57.20 gm honey
  • 53.60 gm golden syrup
  • 57.50 gm vegetable oil
  • 125.00 gm traditional rolled oats
  • 187.50 ml pecans, chopped
  • 165.00 ml natural sliced almonds
  • 187.50 ml pepitas
  • 125.00 ml sunflower seeds
  • 2.50 gm ground cinnamon
  • 62.50 ml finely chopped dried soft and juicy apricots
  • 62.50 ml finely chopped dried pineapple
  • 62.50 ml goji berries
  • 18.00 gm sesame seeds
  • 107.50 gm caster sugar
Instructions:
  • To prepare Vanilla labne, mix yoghurt, icing sugar, vanilla, and salt in a bowl. Line a large sieve with 2 layers of muslin cloth or 5 layers of paper towel. Spoon the yoghurt mixture into the lined sieve, tie it into a bundle with an elastic band, and place a saucer on top. Refrigerate the bundle overnight.
  • - Preheat the oven to 190C/170C fan-forced. - Line a large baking tray with sides with baking paper. - In a small saucepan over low heat, combine honey, golden syrup, and 1 tablespoon of oil. Cook for 2 minutes until smooth and combined. - Spread oats, pecans, almonds, pepitas, and seeds on the prepared tray. Sprinkle with cinnamon. - Drizzle the syrup mixture over the ingredients and stir to coat. - Bake for 20 minutes, stirring halfway through, until golden and toasted. - Let it cool for 30 minutes, then add apricots, pineapple, goji berries, and the remaining oil. Stir until well combined. - Cool completely before serving.
  • Prepare the sesame praline: Spread sesame seeds on a parchment-lined baking tray. Heat sugar and 1/2 cup water in a saucepan until sugar is dissolved. Let it boil for 8-10 minutes until golden, then pour over sesame seeds. Let it cool for 15 minutes and finely chop the praline.
  • Scoop labne into a small serving bowl, sprinkle with a bit of praline. Arrange fruit, muesli, and bowl of labne on a large serving platter. Serve with the extra praline on the side.
