Summer squash bread with cinnamon, nutmeg, and vanilla: a sweet brunch must-have!
Ingredients:
  • 1 cup vegetable oil
  • 3 large eggs
  • 2 cups white sugar
  • 2 teaspoons vanilla extract
  • 3 cups all-purpose flour
  • 3 teaspoons baking powder
  • 2 teaspoons ground cinnamon
  • 2 teaspoons ground nutmeg
  • 2 cups shredded summer squash
Instructions:
  • Preheat the oven to 325°F (165°C) and grease a 9x13-inch baking dish.
  • In a large bowl, use an electric mixer to beat eggs until fluffy. Add sugar, oil, and vanilla; then slowly incorporate flour, baking powder, cinnamon, and nutmeg until well mixed. Gently fold in squash and transfer the batter to the baking dish.
  • Bake in the preheated oven for about 45 minutes, or until a knife inserted into the center of the cake comes out clean.
