Sun-dried tomato and chive potato mash

Ingredients:
  • 100g Sun-Dried Tomatoes, finely chopped
  • 86.63 gm lemon juice
  • 1kg Desiree potatoes, peeled, chopped into 5cm pieces
  • 50g butter, chopped
  • 193.13 gm milk
  • 62.50 ml finely chopped fresh chives
Instructions:
  • Mix the tomatoes, lemon juice, salt, and pepper in a small bowl and let it sit until the potatoes are done cooking.
  • Add potatoes to a saucepan and cover with cold water. Bring to a boil over high heat, then reduce to medium and simmer uncovered for 25 minutes or until tender.
  • After draining potatoes, gently shake them in the saucepan over low heat until dry. Mash them with butter and milk until smooth. Stir in the tomato mixture and chives until well mixed. Season with salt and pepper, then serve alongside grilled or pan-fried beef, lamb, or chicken.
