Fresh sunflower seed pate in collard green wrap - perfect for vegetarians, raw food diets, and paleo lifestyles.
Ingredients:
  • 0.66666668653488 cup raw sunflower seeds
  • water to cover
  • 1 large celery rib
  • 0.25 cup extra-virgin olive oil
  • 1 large lemon, zested and juiced
  • 2 teaspoons dried thyme
  • 1 large clove garlic, peeled
  • 0.5 teaspoon ground black pepper
  • 0.25 teaspoon sea salt
  • 1 collard green leaf, rib removed, or more to taste
Instructions:
  • In a bowl, immerse sunflower seeds in water until covered; let soak for 8 hours. After soaking, drain.
  • In a food processor or blender, combine sunflower seeds, celery, olive oil, lemon zest, lemon juice, thyme, garlic, black pepper, and sea salt until smooth. Spread the mixture onto a collard green leaf.
