Crispy adobo roasted chicken thighs - a simple, flavorful dish perfect for busy nights.
Ingredients:
  • 5 pounds skin-on chicken thighs
  • 2 tablespoons adobo seasoning, or to taste
Instructions:
  • Preheat the oven to a toasty 425 degrees F (220 degrees C) and set up a rack on a baking sheet.
  • Place the chicken on the rack, skin-side down, and generously sprinkle with adobo seasoning. Flip the chicken over, brush the skin with olive oil, and generously sprinkle with adobo seasoning again.
  • Roast in the preheated oven for 30 minutes until the juices run clear, and the internal temperature reaches at least 165°F (74°C).
