Super tasty Spanish roast chicken

Spanish-inspired roast chicken with spicy sausage - a winning combination bursting with flavor.
Ingredients:
  • 1.6 kg potatoes peeled and cut into 2.5cm dice
  • 4 lemons
  • 1 handful fresh flat-leaf parsley
  • 2 kg higher-welfare chicken
  • sea salt
  • freshly ground black pepper
  • 300 g iberico chorizo sausage
  • olive oil
  • 2 cloves garlic peeled and finely chopped
Instructions:
  • Preheat your oven to 220ºC/425ºF/gas 7. Boil the potatoes and 2 lemons for 5 minutes, then drain and prick the lemons with a knife. Stuff the chicken with the hot lemons and parsley stalks. Season the chicken and potatoes with salt and pepper, then arrange them on a baking tray lined with wet greaseproof paper. Top with sliced chorizo and a sprinkle of parsley, then drizzle with olive oil. Bake for 1 hour 20 minutes. Make the gremolata by mixing lemon zest, parsley, and garlic. Carve the chicken, crisp up the potatoes, and serve with the gremolata. Enjoy with a rocket salad.
