Decadent chocolate mousse with a hidden Ferrero Rocher center.
Ingredients:
  • 300g dark cooking chocolate, finely chopped
  • 4 eggs, at room temperature, separated
  • 160ml (2/3 cup) double cream
  • 12 dark chocolate digestive biscuits
  • 60ml (1/4 cup) Frangelico liqueur
  • 6 Ferrero Rocher chocolates
  • 315g (1 1/2 cups) caster sugar
  • 60ml (1/4 cup) water
  • 4 egg whites, at room temperature, extra
  • Pinch of cream of tartar
Instructions:
  • Gently melt the chocolate in a heatproof bowl over simmering water, then allow it to cool slightly before using.
  • Whisk egg yolks and cream with a balloon whisk until soft peaks form, then fold in melted chocolate. In a separate clean bowl, beat egg whites until firm peaks form, then fold into chocolate mixture in batches.
  • Place six 7.5cm food rings on a lined baking tray. Dip half of the biscuits in Frangelico and place them chocolate-side down in each ring. Fill each ring with mousse and press a Ferrero Rocher into the center of each. Cover with more mousse and top with remaining biscuits dipped in Frangelico, chocolate-side up. Chill overnight, then remove rings and chill for an additional hour.
  • Combine sugar and water in a saucepan over low heat, stirring until sugar dissolves. Increase heat to medium-high and cook until mixture reaches 115°C. While the syrup cooks, use electric beaters to whip extra egg whites and cream of tartar in a bowl until soft peaks form. Once the syrup reaches 120°C, slowly pour it into the egg white mixture while whisking. Continue whisking on high speed for about 15 minutes or until thickened.
  • Carefully cover the sandwiches with a layer of meringue, then caramelize using a blowtorch.
