Delicious Swedish walnut cookies made with just eggs, sugar, walnuts, and almond extract.
Ingredients:
  • 6 eggs
  • 1.5 cups white sugar
  • 3.5 cups finely ground almonds
  • 3 teaspoons almond extract
Instructions:
  • Preheat the oven to 325 degrees F (165 degrees C). Line the bottom of a 9 x 9 x 2 inch baking pan with either waxed paper or parchment paper and grease it.
  • Separate eggs, keeping the whites aside. Whip yolks until thick and tripled in volume. Gradually add sugar, beating until very thick. Gently fold in nuts and extract. Whip egg whites until stiff but moist. Fold into the yolks. Transfer batter into the pan.
  • Bake for one hour until fully cooked. Let it cool in the pan for 10 minutes, then remove and peel off the paper. Allow it to cool completely before cutting as desired.
