Delicious nut and pineapple cake with creamy icing. Easy and quick to make.
Ingredients:
  • 2 cups white sugar
  • 0.5 cup chopped walnuts
  • 2 teaspoons baking soda
  • 2 teaspoons vanilla extract
  • 1 (20 ounce) can crushed pineapple with juice
  • 1 (8 ounce) package cream cheese
  • 1.75 cups confectioners' sugar
  • 0.5 cup butter
Instructions:
  • Preheat the oven to 350 degrees F (175 degrees C), then generously grease and flour a 9x13 inch baking pan.
  • Combine flour, sugar, 1/2 cup nuts, and baking soda in a large bowl. Stir in eggs, pineapple, and 2 teaspoons vanilla until smooth. Pour the batter into a 9x13 inch baking pan.
  • Bake at 350°F (175°C) for 40-50 minutes. Top warm cake with icing.
  • Prepare the icing by blending together butter or margarine, cream cheese, 1 teaspoon vanilla, and confectioners sugar in a large bowl until smooth and fluffy. Gently mix in 1/2 cup nuts, then spread the icing on the warm cake.
