Sweet 'sushi' cakes

Impress with cute and effortless dessert sushi made with store-bought sponge rolls, melted chocolate, and colorful sprinkles!
Ingredients:
  • 2 x 250g packets assorted sponge cake mini rolls
  • 47.50 gm white chocolate melts
  • 9 rainbow sour straps
  • 8 blue raspberry flavoured sour straps
  • 3 musk sticks
  • Assorted sprinkles, to decorate
  • Lollies, to decorate (see notes)
  • 76g packet neon glitter writing gel
Instructions:
  • Cut each sponge roll in half horizontally to create two circular rounds.
  • In a small microwave-safe bowl, heat chocolate melts in the microwave on HIGH for 1 minute, stirring halfway through until melted and smooth.
  • Set aside one rainbow sour strap. Using a touch of melted chocolate, fasten 6 of the remaining rainbow sour straps around the exterior of 6 rolls, pressing gently to ensure they stick. Trim the remaining 2 rainbow sour straps to fill in any gaps, securing them with a bit more melted chocolate. Repeat the same process with the blue sour straps.
  • Cut the rainbow sour strap into 3mm x 4cm long strips, the musk sticks into 5mm thick rounds, and thinly slice the assorted lollies. Use the jam and cream swirls in each roll as a guide and pipe writing gel onto the top of each roll. Decorate the rolls with cachous, candy stars, sprinkles, tangy tots, banana lollies, strawberries and cream lollies, musk stick pieces, and sour strap strips following the picture as a guide.
  • Present the rolls elegantly on a serving platter and enjoy!
