Sweet chilli chicken sushi

Sweet chili chicken sushi rolls - a kid-friendly twist on a classic favorite!
Ingredients:
  • 9.20 gm rice bran oil
  • 200.00 gm sushi rice
  • 32.50 gm mirin seasoning
  • 4 chicken tenderloins, cut into strips lengthways
  • 68.75 gm sweet chilli sauce
  • 39.60 gm Kewpie mayonnaise
  • 4 nori sheets
  • 1/2 medium avocado, thinly sliced
  • 1/2 Lebanese cucumber, cut into thin strips
  • 4 green oak lettuce leaves, torn
Instructions:
  • Prepare the sushi rice by rinsing it thoroughly until the water runs clear. Then, place the rinsed rice in a sieve over a bowl and let it drain for 10 minutes.
  • In a small saucepan, combine rice with 1 cup of cold water. Simmer over medium heat, covered, until water is absorbed, about 12 minutes. Let it stand, covered, for an additional 10 minutes off the heat before serving.
  • Transfer the rice into a spacious ceramic dish. Gently break up any lumps in the rice by stirring with a spatula. Slowly incorporate the seasonings, lifting and folding the rice until it reaches room temperature.
  • Coat chicken in 2 tablespoons of delicious sweet chilli sauce in a small bowl.
  • In a small frying pan over medium-high heat, heat oil and add chicken. Cook for 5 minutes, turning occasionally until chicken is cooked through. In a small bowl, combine mayonnaise and the remaining sweet chili sauce.
  • Lay down 1 nori sheet with the shiny-side facing down on a sushi mat. Leave a 2cm strip at one long end and spread the rice mixture evenly over the nori using damp fingers. Then, spread the mayonnaise mixture across the center of the rice. Finally, place the chicken, avocado, cucumber, and lettuce over the rice.
  • Roll tightly with the bamboo mat to create a sushi roll. Slice the roll into 6 pieces. Repeat the process with the remaining ingredients to make a total of 24 pieces. Serve and enjoy!
