30-minute meal, quick and easy from prep to plate.
Ingredients:
  • 36.80 gm canola oil
  • 82.50 ml blanched almonds
  • 600g Chicken Thigh Fillets, sliced
  • 1 red capsicum, thinly sliced
  • 1 red onion, cut into thin wedges
  • 175g green beans, trimmed, halved
  • 1 bunch baby broccoli, cut into thirds
  • 82.50 ml Farm Sweet Chilli Relish
  • 21.00 gm gluten-free soy sauce
  • 125.00 ml coriander leaves
  • Steamed jasmine rice, to serve
Instructions:
  • In a hot wok or deep frying pan, sizzle 2 teaspoons of oil. Toss in almonds and stir until golden brown, about 1-2 minutes. Drain on paper towel to crisp up.
  • In a hot wok, sizzle the chicken in 1 tablespoon of oil until it turns golden and fully cooked, about 5 minutes. Remove chicken and set aside on a plate.
  • - Heat the remaining oil in your wok over high heat until sizzling. Stir-fry the capsicum, onion, beans, and broccoli for 2 minutes. Pour in 1/4 cup of water and continue stir-frying for another 2-3 minutes. Add the chicken, relish, and soy sauce. Season with a dash of pepper and stir-fry until everything is heated through. Finish by topping it off with almonds and fresh coriander. Serve alongside some fluffy rice.
