Sweet chilli chicken & broccolini stir-fry

Ingredients:
  • 1 x 450g pkt hokkein noodles
  • 1 bunch broccolini
  • 13.80 gm peanut oil
  • 500g chicken thigh fillets, trimmed of any excess fat, thinly sliced across the grain
  • 20.00 gm water
  • 1 x 520g jar Thai sweet chilli sauce
  • 1 x 75g pkt toasted cashews
  • 2 green shallots, trimmed, diagonally sliced
Instructions:
  • Place noodles in a heatproof bowl and pour over boiling water. Let sit for 5 minutes, then drain and fluff noodles with your fingers.
  • Prepare the broccolini by cutting the florets from the stem and slicing the stems diagonally.
  • In a hot wok, sear half of the chicken in 1 teaspoon of oil until cooked through. Remove to a bowl and cook the remaining chicken the same way with another teaspoon of oil.
  • In a wok, heat the remaining oil and toss in the broccolini stems. Stir-fry for 30 seconds until slightly tender. Pour in water and continue to stir-fry until vibrant green. Add broccolini florets, chicken, noodles, and chili sauce. Stir and cook for 1-2 minutes until everything is heated through. Finish by sprinkling with cashews and green shallots before serving.
