Sweet and sour meatballs

Whip up quick and delicious sweet and sour meatballs with tangy pineapple and a spicy kick for an easy weeknight meal solution.
Ingredients:
  • 1kg 3 Star Beef Mince
  • 2 garlic cloves, crushed
  • 20.00 ml ginger, finely grated
  • 2 spring onions, thinly sliced
  • 40.00 gm caster sugar
  • 140g tomato sauce
  • 60ml rice wine vinegar
  • 48.80 gm Worcestershire sauce
  • 1 long red chilli, thinly sliced
  • 227g can pineapple chunks, drained reserving liquid
  • 18.20 gm peanut oil
  • 1 brown onion, cut into wedges
  • 1 red capsicum, seeded, thinly sliced
  • 1 green capsicum, seeded, thinly sliced
  • Steamed long-grain rice, to serve
  • Coriander leaves, to serve
Instructions:
  • Mix the mince, garlic, ginger, and spring onion in a large bowl. Shape level tablespoons of the mixture into balls and chill on a plate in the fridge for 20 minutes to firm up.
  • In a small saucepan over low heat, gently mix together the sugar, tomato sauce, vinegar, Worcestershire sauce, chili, and reserved pineapple liquid. Allow it to simmer until the sugar dissolves, stirring occasionally. Once done, remove from heat.
  • In a large wok or frying pan over medium-high heat, heat the oil. Cook the meatballs in 3 batches, turning occasionally, until browned all over, about 5 minutes per batch. Transfer to a heatproof plate.
  • Stir-fry onions and bell peppers until charred. Add back meatballs, pineapple, and tomato sauce. Stir everything and heat through.
  • Serve the stir-fried rice on individual plates and garnish with fresh coriander before serving.
