Sweet and Sour Meatloaf

Enhance meatloaf with Progresso® Plain Bread Crumbs for a gourmet twist on a classic dish featuring a savory blend of ground beef and pork.
Ingredients:
  • 1 egg
  • 1 lb. lean ground beef
  • 1/2 lb. lean ground pork
  • 1/2 cup Progresso™ Plain Bread Crumbs
  • 1/4 cup purchased sweet-and-sour sauce
  • 1 tablespoon instant minced onion
  • 1/2 teaspoon garlic-pepper blend
  • 1/4 teaspoon salt
  • 4 tablespoons purchased sweet-and-sour sauce
  • 3 or 4 green or red bell pepper rings
  • 3 or 4 drained canned pineapple slices
Instructions:
  • Preheat oven to 350°F. In a large bowl, beat the egg, then mix in all the remaining meatloaf ingredients until well combined. Press the mixture firmly into an ungreased 8x4-inch loaf pan. Bake at 350°F for 40 minutes.
  • Take the meatloaf out of the oven and generously coat it with 3 tablespoons of sweet-and-sour sauce. Then, artfully place bell pepper rings and pineapple slices on top of the sauce. Finish by brushing the loaf with the remaining tablespoon of sauce.
  • Place the meatloaf back in the oven and bake for another 25-30 minutes, or until the center is thoroughly cooked and a meat thermometer reads 160°F. Cover with foil and allow to rest for 5 minutes before slicing and serving.
