Quick and flavorful sweet and sour pork stir-fry with colorful veggies and pineapple - perfect for any weeknight!
Ingredients:
  • 1 pound pork loin, cut into bite-sized pieces
  • 1 tablespoon Chinese five-spice powder
  • 0.25 cup vegetable oil, divided, or as needed
  • 0.5 red bell pepper, cut into bite-sized pieces
  • 0.5 yellow bell pepper, cut into bite-sized pieces
  • 0.5 orange bell pepper, cut into bite-sized pieces
  • 0.5 red onion, cut into bite-sized pieces
  • 3 cloves garlic, chopped
  • 1 cup chopped broccoli
  • 1 cup fresh pineapple, cut into bite-size chunks
  • 0.25 cup sweet and sour sauce
Instructions:
  • In a bowl, generously season pork with aromatic Chinese five-spice powder, ensuring it is thoroughly coated.
  • In a sizzling wok, sear pork in 2 tablespoons of oil until center is slightly pink, around 5 minutes. Transfer to a plate. Check with a thermometer - should reach at least 145 degrees F (63 degrees C).
  • Pour the remaining 2 tablespoons of oil into the wok as required. Stir-fry the red, orange, and yellow bell peppers along with the onion and garlic until they are crisp-tender, which should take around 3 to 5 minutes. Next, add the broccoli and pineapple and stir-fry for an additional 3 minutes.
  • Combine the pork and sweet and sour sauce in the wok, stir-fry until pineapple is lightly browned, approximately 2 minutes.
