Tantalizing sweet and sour pork stir-fry with pineapple and spicy chili.
Ingredients:
  • 225g can pineapple pieces in natural juice
  • 2 long red chillies
  • 18.40 gm vegetable oil
  • 500g pork mince (see note)
  • 3cm piece fresh ginger, finely grated
  • 1 carrot, thinly sliced
  • 1 green capsicum, roughly chopped
  • 5.00 gm cornflour
  • 53.75 gm caster sugar
  • 62.50 ml white wine vinegar
  • 76.25 gm oyster sauce
  • 41.60 gm tomato sauce
  • 42.00 gm salt-reduced soy sauce
  • 1/4 small iceberg lettuce, coarsely shredded
  • 800.00 gm steamed long grain rice
  • 62.50 ml fresh coriander leaves
Instructions:
  • Separate pineapple from juice, saving the liquid. Finely dice 1 chili.
  • In a hot wok or large frying pan, sizzle the oil and stir-fry the mince until browned and crumbly. Toss in ginger, garlic, and chopped chili for a burst of flavor. Then, add carrot and capsicum and stir-fry until tender.
  • While you wait, mix cornflour with 2 tablespoons of water in a small bowl. In another small bowl, combine the reserved pineapple juice with sugar, vinegar, oyster sauce, tomato sauce, and soy sauce.
  • Combine the soy sauce mixture with the mince and stir-fry until coated. Then add the cornflour mixture and stir-fry until the sauce boils and thickens. Remove from heat, mix in the pineapple and lettuce, then toss everything together. Slice the remaining chili, serve the pork mixture over rice, and sprinkle with coriander and sliced chili before serving.
