Sweet and sour prawn san choy bau

Whip up a delicious sweet and sour prawn san choy bau in just 30 minutes!
Ingredients:
  • 700g medium green prawns, peeled
  • 2 large red capsicums, deseeded, thinly sliced
  • 400g green beans, trimmed
  • 515g jar Kan Tong Sweet & Sour Cooking Sauce
  • 250g pkt Uncle Ben’s Express Basmati Rice
  • 8 iceberg lettuce leaves, trimmed
  • 1 shallot, thinly sliced
Instructions:
  • In a large deep frying pan or wok over medium-high heat, heat 1 teaspoon of oil. Cook half of the prawns for 2-3 minutes until cooked through. Transfer to a plate and keep warm. Repeat with another teaspoon of oil and the remaining prawns.
  • In the same pan or wok, heat the remaining oil. Add capsicum and beans, stir-fry until tender crisp. Add the prawns back in, pour in Kan Tong cooking sauce, stir-fry until everything is well combined and the sauce is heated through. Remove from heat.
  • Prepare the rice per packet instructions. Arrange lettuce on plates. Scoop rice onto lettuce. Add stir-fry and sprinkle with shallots.
