Caramelized onion seared tuna with sweet-sour sauce.
Ingredients:
  • 3 tablespoons olive oil
  • 1 large onion, cut into chunks
  • 4 tuna steaks
  • 1 cup red wine vinegar
  • 1 cup sugar
Instructions:
  • In a skillet, warm olive oil over medium heat. Add onion and sauté until soft and translucent for about 5 minutes. Lower heat to medium-low and cook until onion is very tender and deep brown for 15 to 20 minutes. Transfer onion from skillet.
  • Sear the tuna steaks in the skillet over medium-high heat until they turn golden brown on each side, approximately 2 minutes per side. Transfer the tuna steaks to a serving tray to keep warm.
  • Combine vinegar and sugar in a skillet, stirring until sugar dissolves. Add onions back to the pan and simmer until liquid reduces and thickens slightly, about 5 minutes. Return tuna to the pan and cook for 3 to 5 minutes. Serve tuna on a warm tray, topped with the onion and sweet-sour mixture.
