Sweet and spicy candied pecans - nuts soaked in syrup, coated with sugar and spices, then roasted for a tasty snack or salad topper.
Ingredients:
  • 1 cup white sugar
  • 5 cups hot water
  • 10 cups pecan halves
  • 0.66666668653488 cup white sugar
  • 5 tablespoons chili powder
  • 1 tablespoon cayenne pepper
Instructions:
  • Blend 1 cup of sugar with hot water in a large bowl until the sugar dissolves completely. Let the pecans soak in the water for 1 hour, then drain.
  • Preheat the oven to 400 degrees F (200 degrees C) and line two 9x13 inch baking dishes with parchment paper.
  • Combine 2/3 cup sugar, chili powder, and cayenne pepper in a large bowl, sifting them together. Add pecans and toss until evenly coated. Spread the coated pecans in a single layer on the prepared dishes.
  • Bake the pecans in the preheated oven for 10 to 15 minutes, or until the coating is bubbly, remembering to stir them once. Once done, immediately transfer the pecans from the pans to a flat surface lined with parchment paper to cool.
