Spicy pepper relish: sauté chiles, onion, bell pepper with sugar, vinegar, and salt for a zesty topping.
Ingredients:
  • 1 pound medium-hot red chile peppers, such as Fresnos or red jalapenos
  • 2 small red or orange bell peppers - stemmed, seeded, ribs removed
  • 0.5 large onion, peeled and quartered
  • 1.25 cups white sugar
  • 0.75 cup apple cider vinegar
  • 1.5 teaspoons pickling salt
Instructions:
  • Put on rubber or latex gloves, remove the tops of the chiles. In a food processor, finely chop the chiles, bell peppers, and onion in batches for about 1 minute per batch. Move the mixture to a nonreactive 3-quart pot.
  • Combine sugar, vinegar, and pickling salt with the chile mixture and bring to a boil. Simmer over medium heat, stirring occasionally and more frequently towards the end, until thickened, for 20 to 30 minutes.
  • Transfer the relish into wide-mouth, 1/2-pint jars, ensuring to leave 1/2 inch of headspace. Clean the rims with a damp paper towel. Allow the jars to cool at room temperature for approximately 1 hour.
  • Secure the lids tightly and place the containers in the refrigerator for 2 to 3 weeks or in the freezer for up to 6 months for storage.
