Spicy pepper jelly glaze elevates roast chicken with a rich buttery touch.
Ingredients:
  • 1 (4 pound) whole chicken
  • 0.5 cup hot pepper jelly
  • 1 cup butter
Instructions:
  • Prepare the chicken by carefully removing the giblets and setting them aside. Rinse the chicken in cold water and gently pat it dry with paper towels. Neatly tuck the front skin down over the neck cavity, fold the wings under the breast, and securely tie the legs and tail together with kitchen twine or string.
  • Preheat the oven to 400°F (200°C) for the perfect cooking temperature.
  • Arrange chicken on a roasting rack and generously season with salt and pepper. In a small saucepan or in the microwave, melt jelly and 1/2 cup of butter or margarine together. Melt the remaining 1/2 cup of butter or margarine separately.
  • Place the chicken in a preheated oven for 15 minutes. Lower the heat to 375 degrees F (190 degrees C) and brush with melted butter or margarine. Bake for an additional 30 minutes, basting frequently with the butter. Finally, generously baste with the jelly/butter mixture and bake for another 15 minutes. Let it sit for 10 minutes before slicing and serving.
