Serve fresh chili on the side for customizable spice levels, and enjoy with chopsticks.
Ingredients:
  • 1 x 440g pkt hokkien noodles
  • 60ml (1/4 cup) hoisin sauce
  • 33.00 gm sweet chilli sauce
  • 30.00 gm water
  • 18.20 gm peanut oil
  • 400g pork stir-fry strips
  • 1 brown onion, halved, thinly sliced
  • 1 garlic clove, thinly sliced
  • 200g snow peas, trimmed, halved diagonally
  • 1 bunch baby pak choy, trimmed, coarsely chopped
  • 1 long fresh red chilli (optional), halved, thinly sliced
Instructions:
  • Follow the packet instructions to cook the noodles, then mix hoisin sauce, sweet chili sauce, and water in a small jug.
  • Heat a wok or large frying pan over high heat until smoking. Add 1 teaspoon of oil, then half of the pork. Stir-fry for 1-2 minutes until browned, then transfer to a bowl. Repeat with the remaining oil and pork, heating the wok between batches.
  • Heat the remaining oil in the wok, then add the onion and garlic, stir-frying for 2 minutes until the onion softens. Toss in the snow peas and pak choy, stir-frying for 2 more minutes. Add the hoisin sauce mixture, pork, and noodles, stir-frying for an additional 3 minutes until vegetables are tender and noodles are heated through.
  • Serve the stir-fry in individual bowls and top with optional chili for added spice.
