Delicious Asian-inspired sweet and sticky pork ribs that will leave you craving more.
Ingredients:
  • 1.3kg rack American pork spare ribs
  • 131.25 gm soy sauce
  • 67.50 gm hoisin sauce
  • 40.00 ml mirin (see note)
  • 22.00 gm sweet chilli sauce
  • 57.20 gm honey
  • 18.20 gm olive oil
  • 5cm piece ginger, peeled, finely chopped
  • 765.00 gm chicken style liquid stock
  • 300.00 gm white long-grain rice, well rinsed
  • 250.00 ml frozen peas
Instructions:
  • Prepare the marinade by mixing soy sauce, hoisin sauce, mirin, sweet chili, and honey in a spacious ceramic ovenproof dish.
  • Coat ribs with marinade and refrigerate for a minimum of 8 hours. Let ribs sit at room temperature for 30 minutes before cooking.
  • Preheat your oven to 200°C. Roast the ribs, brushing with marinade every 10 minutes, until they are tender and cooked through, around 30 minutes.
  • To make delicious pilaf, start by heating oil in a large saucepan over medium heat. Sauté onion on low heat for 10 minutes until soft. Add ginger and garlic, cook for 2 minutes. Pour in stock, bring to a boil. Stir in rice and salt. Simmer covered for 15-20 minutes until rice is fluffy. Remove from heat, fold in peas, cover, and let rest for 5 minutes before serving.
  • Divide the rack into sections and plate alongside the fragrant pilaf.
