Marinated pork ribs with corn and maple butter

Ingredients:
  • 2 sachets chicken stock paste
  • 70.63 gm barbecue sauce
  • 65.00 gm tomato sauce
  • 2 cloves garlic, crushed
  • 10.00 gm smoked paprika
  • 1 kg pork ribs
  • 4 pieces whole corn on the cob, cut in half
  • 2 litres chicken style liquid stock
  • 100g butter, softened
  • 40g maple syrup
  • 1 bunch chives, chopped
Instructions:
  • In a jug, blend BBQ sauce, tomato sauce, chicken stock paste, minced garlic, and smoked paprika until thoroughly mixed.
  • In a spacious bowl, add the ribs and generously coat them with half of the marinade. Chill in the refrigerator for 3 hours.
  • Preheat the oven to 160C.
  • Prepare a baking tray lined with parchment paper, set a wire rack on top, and arrange the marinated ribs on the rack. Bake in the oven for 1 1/2 hours, making sure to baste with the remaining marinade throughout the cooking process.
  • Simmer corn in flavorful chicken stock for 50 minutes.
  • Take out the corn from the stock, coat with a light drizzle of melted butter, and grill for 3 minutes until charred, but not overcooked.
  • Mix together the velvety butter, sweet maple syrup, and fragrant chives.
  • After grilling, take the corn off the barbecue and lavish it with the maple butter.
