Vegetarian burger bursting with flavors - golden patty filled with sweet potatoes, zucchini, carrots, corn, and peas, served in a wholesome multigrain bun.
Ingredients:
  • 400g orange sweet potato, peeled, roughly chopped
  • 1 small carrot, peeled, grated
  • 1 small zucchini, grated
  • 62.50 ml frozen corn kernels, thawed
  • 62.50 ml frozen peas, thawed
  • 2 green onions, chopped
  • 1 egg, lightly beaten
  • 125.00 ml plain flour
  • 9.20 gm olive oil
  • 4 multigrain bread rolls, halved
  • 50g baby spinach
  • 44.00 gm sweet chilli sauce
Instructions:
  • Boil sweet potato in salted water for 8 to 10 minutes until tender. Drain, cool under cold water, then mash in a bowl.
  • Combine grated carrot, zucchini, corn, peas, diced onion, egg, and flour. Mix well. Form the mixture into four 2cm-thick patties.
  • Heat oil in a non-stick frying pan over medium-high heat. Cook patties until golden and cook through, about 4 to 5 minutes per side.
  • Place the burger patties on the bottom halves of the rolls. Add a generous handful of fresh spinach, drizzle with sauce of your choice, then top with the remaining roll halves. Serve and enjoy!
