Sweet Chunk Zucchini Pickles

Whip up flavorful zucchini pickles with a little patience for a tasty treat.
Ingredients:
  • 1 gallon water
  • 16 cups peeled and cubed zucchini
  • 1 cup pickling lime (calcium hydroxide)
  • 2 cups apple cider vinegar
  • 8 cups white sugar
  • 3 teaspoons pickling spice
Instructions:
  • In a large bowl, submerge the zucchini in one gallon of water and mix in the pickling lime. Allow it to soak for 24 hours. Rinse the zucchini thoroughly, then soak it in another gallon of fresh water for 3 hours before draining.
  • In a large pot over medium heat, combine vinegar, sugar, pickling spice, and salt until sugar dissolves. Add drained zucchini, cover, and let rest for 24 hours. Simmer zucchini mixture for 35 minutes, then cool.
  • Start by sterilizing 10 pint-sized jars and lids in boiling water for at least 5 minutes. Divide and pack the zucchini mixture evenly into the hot jars, leaving a 1/4-inch space from the top. Remove air bubbles by running a knife or spatula around the inside of the jars. Clean the rims with a damp paper towel to ensure no residue remains. Seal with lids and rings, then refrigerate.
