Sweet corn and ham fritters

Versatile fritters perfect for kids' lunches or after-school snacks. Enjoy hot or cold.
Ingredients:
  • 2 large corn cobs, husk and silk removed
  • 50g shaved lean leg ham, thinly sliced
  • 3 green onions, thinly sliced
  • 125.00 ml plain flour
  • 128.75 gm milk
  • 2 eggs, lightly beaten
  • 36.80 gm rice bran oil
  • 1/2 large avocado, finely diced
  • 250g cherry tomatoes, quartered
  • 62.50 ml fresh baby basil leaves
Instructions:
  • Cut corn kernels from cobs, keeping them in small chunks. Combine corn, ham, onion, and flour in a bowl. Season with salt and pepper, then add milk and egg. Mix thoroughly.
  • In a large frying pan over medium-high heat, heat oil. Spoon 1/4 cup of batter into the pan and spread it out to form a flat round. Cook each side for 3 to 4 minutes until well browned. Transfer the fritters to a plate lined with paper towel, cover loosely to keep warm, and repeat with the remaining mixture, adding more oil if needed.
  • Gently combine ripe avocado, juicy tomato, and fragrant basil. Serve the fritters with the flavorful avocado salsa.
