Delicious sweet corn pudding, a mix between corn cakes and spoonbread, requires patience but is truly rewarding.
Ingredients:
  • 2 cups frozen whole-kernel corn, thawed
  • 0.5 cup water
  • 0.5 cup cornmeal
  • 0.33333334326744 cup white sugar
  • 5 tablespoons margarine, softened
  • 0.25 cup masa harina
  • 4 teaspoons milk
Instructions:
  • Puree 1 cup corn kernels, water, and cornmeal in a blender or food processor until smooth.
  • In a medium bowl, cream together sugar, margarine, and masa harina until light and fluffy. Add blended corn mixture and stir well. Mix in remaining 1 cup of corn, milk, baking powder, and salt until smooth.
  • Pour the tomalito batter into a double boiler over simmering water, cover tightly with aluminum foil, and steam for 50 to 60 minutes until firm, remembering to check and refill water as needed.
  • Before indulging, gently swirl the pudding to ensure a velvety consistency. Dish out into petite portions, delight awaits!
