Sweet corn with capsicum and onion

Transform canned corn and assorted vegetables into a flavorful and quick weeknight side dish.
Ingredients:
  • 2 large red capsicum, halved, deseeded, membrane removed, cut into thin strips
  • 1 brown onion, sliced
  • 2 garlic cloves, crushed
  • 1 440g can corn kernels, drained
  • 2 tsp balsamic vinegar
Instructions:
  • In a large frying pan over medium-low heat, warm the olive oil. Cook the capsicum partially covered for 10 minutes. Add the onion and garlic, cooking uncovered and stirring occasionally for another 5 minutes until the onion is soft. Add corn and balsamic vinegar, continuing to cook for another 3-4 minutes until heated through. Season with salt and pepper, then serve warm or at room temperature.
