Sweet cranberry sauce

Indulge in this decadent sauce as a luscious topping for ice cream.
Ingredients:
  • 300g frozen raspberries
  • 125g frozen cranberries
  • 110g caster sugar
  • 125ml cranberry juice
  • 1 cinnamon quill
  • 5.00 gm arrowroot
  • 40.00 ml or brandy
Instructions:
  • In a saucepan, mix together the berries, sugar, juice, and cinnamon. Bring to a boil over medium heat, stirring constantly. Reduce heat to low and simmer for 5 minutes until the berries begin to burst, stirring occasionally.
  • Pour the berry mix through a sieve into a bowl, firmly pressing on solids to extract all the juice. Discard solids. Pour the liquid back into the pan. Dissolve arrowroot in a bit of cold water, mix with some berry juice, then add this to the pan. Stir over low heat for 1-2 minutes until it thickens. Mix in the Chambord or brandy. Let it cool. Store sauce in the fridge for up to 1 week.
