Indulge in these irresistible dulce de leche fritters topped with creamy ice cream. This recipe creates a velvety 300ml of dulce de leche and 1 liter of ice cream, with leftovers for later.
Ingredients:
  • ¼ teaspoon bicarbonate of soda
  • 500 ml goat's milk
  • 500 ml cow's milk
  • 200 g caster sugar
  • 1 stick of cinnamon
  • 1 vanilla pod
  • 500 ml single cream
  • 2 large free-range egg yolks
  • 50 g caster sugar
  • 200 g dulche de leche
  • 3 teaspoon ground cinnamon
  • 20 g icing sugar
  • 1 large free-range egg
  • 150 g plain flour
  • 100 ml whole milk
  • 1 tesapoon baking powder
  • sunflower oil
Instructions:
  • For the dulce de leche, dissolve bicarbonate of soda in 2 teaspoons of water. In a large pan, combine both milks, sugar, and cinnamon stick over medium heat. Simmer for 10 minutes until shimmering, stirring often. Remove from heat and stir in bicarbonate of soda mixture. Return to heat and briskly simmer for about 1 hour until golden brown and thick. Stir every 5 minutes until deep coppery brown and syrupy. Pour into a jar and chill. For the ice cream, heat cream and vanilla seeds until shimmering. Whisk egg yolks and sugar, add vanilla cream, then cook until thickened. Cool, fold in dulce de leche, then churn or freeze. For the fritters, combine cinnamon and sugar. Whisk icing sugar, egg, flour, milk, and baking powder. Heat oil to 180ºC. Fry spoonfuls of batter until golden and puffy, turning constantly for 5 minutes. Drain, roll in cinnamon sugar, and serve with ice cream.
