Sweet heart custard doughnuts

Indulge in these decadent custard-filled doughnuts filled with love.
Ingredients:
  • 812.50 ml plain flour
  • 53.75 gm caster sugar
  • 3 tsp dried yeast
  • Rind of 1 lemon, finely grated
  • Salt
  • 250ml milk, lukewarm
  • 100g butter, melted
  • 4.40 gm vanilla extract
  • 240.00 gm store-bought thick custard
Instructions:
  • In a bowl, mix together flour, sugar, yeast, lemon rind, and a pinch of salt.
  • In a jug, mix lukewarm milk, melted butter, egg yolks, and vanilla extract. Add this milk mixture to the flour mixture and stir until it comes together. Transfer the dough onto a lightly floured surface and knead until smooth. Place the dough in a greased bowl, cover, and let it rest for 1 1/2 hours or until doubled in size.
  • Gently deflate dough. Knead for 2 minutes. Roll dough to 1cm thickness. Cut out doughnuts using a 7cm heart-shaped cutter. Place on a baking paper-lined tray to rise for 30 minutes.
  • In a saucepan over medium-high heat, heat 1.5L of canola oil to 180C. Deep fry the doughnuts in batches for 1 minute on each side until they are golden and puffed. Remove and drain on paper towel, then immediately coat with caster sugar while still hot.
  • Pipe 1 cup of store-bought thick custard into a piping bag with a 5mm plain nozzle. Insert nozzle into the side of the doughnuts and fill with custard.
