Sweet pickled hard boiled eggs with onion rings, lasting 6 months in the fridge.
Ingredients:
  • 12 eggs
  • 1 large onion, sliced into rings
  • 2 cups white wine vinegar
  • 2 cups water
  • 0.5 cup white sugar
  • 1 tablespoon pickling spice, wrapped in cheesecloth
Instructions:
  • Place the eggs in a large pot and cover them with water. Bring the water to a boil over medium-high heat with the lid on. Let the eggs boil gently for 10 minutes. Drain the water and cool the eggs by running cold water over them. Peel the eggs before using.
  • In a saucepan, combine vinegar, water, sugar, and salt to make the flavorful brine. Stir over medium heat until the sugar is completely dissolved.
  • Arrange the eggs and onion rings neatly in a sanitized 2 quart jar, leaving 1 inch of space from the top.
  • Add pickling spice to the brine and give it a delightful swirl for 30 seconds. Remove the spice bag and pour the brine over the eggs, leaving 1/4 inch space from the top of the jar. Seal the jar with a sterilized lid and refrigerate for 1 to 2 weeks before serving. Enjoy chilled.
