Sweet potato, pear and goat's cheese bites

Indulge in irresistible sweet potato, pear, and goat cheese bites - a must-have for your next gathering.
Ingredients:
  • 2 small orange sweet potatoes (see notes)
  • Olive oil cooking spray
  • 1 small Packham's Triumph pear
  • 120g packet herb garlic goat's cheese (see notes)
  • 37.95 gm walnuts, roughly chopped, toasted
  • 2 tsp small fresh thyme sprigs
  • 2 tsp balsamic vinegar glaze
Instructions:
  • Preheat the oven to 220C/200C fan-forced and set a wire rack over a large baking tray.
  • Prepare the sweet potatoes by trimming and discarding the ends before cutting into thin 5mm rounds. Arrange the rounds in a single layer on a wire rack and evenly coat both sides with oil. Season with salt and pepper, then bake for 12 minutes. Flip the rounds over and bake for an additional 12 minutes until they turn golden brown. Allow them to cool for 5 minutes before serving.
  • Cut pear into quarters lengthwise, remove and discard core, then thinly slice each quarter crosswise. Arrange potato rounds on a serving plate. Top each round with 1 teaspoon of goat’s cheese, followed by 2 slices of pear. Sprinkle with walnuts and thyme, and season with salt and pepper.
  • Right before serving, generously drizzle with the flavorful glaze.
