Sweet potato and lentil patties with tzatziki

Quick and delicious vegetarian patties, perfect for a grab-and-go lunch!
Ingredients:
  • 500g peeled sweet potato, cut into 2cm cubes
  • 1.25 gm ground cumin
  • 1/2 tsp ground coriander
  • 400g can brown lentils, rinsed, drained
  • 40.00 ml chopped fresh coriander leaves
  • 30g breadcrumbs
  • 9.20 gm extra virgin olive oil
  • 85g (1/3 cup) tzatziki, to serve
  • 100g baby rocket leaves
Instructions:
  • Preheat the oven to 200C/180C fan forced. Line a large baking tray with baking paper. Arrange sweet potato on the tray, lightly spray with olive oil, sprinkle with ground cumin and coriander. Roast for 25-30 minutes until tender. Transfer to a bowl, coarsely mash, then allow to cool.
  • Mix lentils, fresh coriander, and breadcrumbs into the sweet potato mixture until fully incorporated. Season the mixture. Form it into eight 2cm-thick patties.
  • 1. Heat oil in a large non-stick pan over medium-high heat. Cook patties in batches for 2-3 minutes on each side until golden brown. Serve by placing a dollop of tzatziki on each plate and topping with rocket, tomato, and patties.
