Sweet potato and walnut salad

Impress with a festive roasted sweet potato, beetroot, and walnut salad.
Ingredients:
  • 1kg gold sweet potato, cut crossways into 1cm-thick slices
  • 36.40 gm olive oil
  • 2 garlic cloves, thinly sliced
  • 50g walnut
  • 120g pkt Superfood Leaf Blend
  • 2 x 250g pkts cooked baby beetroot, quartered
  • 60ml balsamic dressing
Instructions:
  • Preheat the oven to 200C. Toss sweet potato, oil, and garlic in a roasting pan. Roast for 40 minutes, or until sweet potato is tender and caramelized.
  • Add walnuts and cook for an additional 5 minutes until toasted. Let cool for 20 minutes before using.
  • Assemble the sweet potato mixture, salad leaves, and beetroot on a serving platter, then generously drizzle with dressing and season to taste.
