Sweet potato bites

Ingredients:
  • 9.20 gm olive oil
  • 2 tsp ground coriander
  • 1/4-1/2 tsp chilli powder
  • Salt & ground black pepper
  • 750g orange sweet potato (kumara), peeled, cut into 2cm cubes
  • 130g (1/2 cup) skim milk natural yoghurt
  • 40.40 gm sour light cream
  • 62.50 ml chopped fresh coriander
Instructions:
  • Preheat the oven to 200°C and prepare a large baking tray with non-stick baking paper.
  • In a large bowl, combine oil, coriander, garlic, chili, salt, and pepper. Mix thoroughly. Add sweet potato and toss until evenly coated with the flavorful oil mixture.
  • Arrange the sweet potato slices in a single layer on the lined tray. Bake in a preheated oven for 25 minutes or until beautifully golden and tender.
  • In a small bowl, mix yoghurt, sour cream, and coriander. Season with salt and pepper to taste.
  • Arrange the sweet potato bites beautifully on a platter and enjoy with the delectable dipping sauce, along with toothpicks for easy serving.
