Elevate sausage rolls by adding frozen sweet potato chips.
Ingredients:
  • 3 sheets frozen puff pastry, partially thawed
  • 125.00 ml caramelised onion
  • 320g marinated fetta, drained, crumbled
  • 2 tsp fresh thyme leaves
  • 1/2 x 750g packet Sweet Potato Straight Cut Fries
  • 1 egg, lightly beaten
  • Sesame seeds, to serve
Instructions:
  • Preheat your oven to 200°C (180°C fan-forced) and line 2 large baking trays with baking paper.
  • Lay a sheet of pastry on a flat surface. Spread 2 tablespoons of onion along the edge closest to you, leaving a 2cm border. Sprinkle 1/3 of the feta and thyme on top. Place 1/3 of the chips on the feta, leaving a 2cm border. Brush edges with egg wash. Roll up the pastry from the edge closest to you to seal the filling. Use a fork to seal the ends. Transfer to a prepared baking tray.
  • Continue assembling the remaining ingredients - pastry, onion, feta, thyme, chips, and egg to create three rolls. Brush the rolls with egg, sprinkle with sesame seeds, season with salt and pepper. Bake for 45 minutes or until golden and puffed. Allow the rolls to stand for 10 minutes before serving.
