Try these savory sweet potato waffles topped with crispy bacon, a perfectly fried egg, and fresh scallions any time of day! Perfect for repurposing leftover sweet potatoes.
Ingredients:
  • For the fried eggs:

  • 12 ounces bacon
  • 1 cup (140g) flour
  • 6 tablespoons (103g) cornmeal
  • 2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 3 large eggs
  • 3/4 cup sweet potato mash (See Recipe Note)
  • 1 1/2 cups buttermilk
  • 2 tablespoons melted butter
  • 3 scallions, thinly sliced
  • Cooking spray or vegetable oil (for the waffle iron)
  • 4 or more large eggs (at least one per person)
  • Honey, for drizzling
Instructions:
  • Fry bacon in a large skillet over medium heat until brown and crispy. Drain on paper towels, then break each slice into desired size pieces.
  • Preheat the waffle iron until it's hot. Place a baking sheet in the oven at its lowest temperature to keep the waffles warm until serving.
  • Combine the flour, cornmeal, baking powder, baking soda, and salt in a bowl. Whisk until well mixed.
  • First, carefully separate the egg yolks from the whites into different bowls. Then, using an electric mixer, beat the egg whites until soft peaks form. Set aside.
  • Make the batter: In a large bowl, combine egg yolks, mashed sweet potato, buttermilk, and melted butter until smooth. Mix in the dry ingredients until blended. Carefully fold in the egg whites and stir in the scallions, saving some for garnish.
  • Prepare the waffle iron by brushing or spraying it with vegetable oil. Pour in the batter, adjusting the amount based on the size of your waffle iron. Add a sprinkle of bacon, then close the lid and bake until golden and crispy. Make more waffles as needed, keeping them warm in the oven as you cook the eggs.
  • For perfectly cooked eggs: Melt butter in a skillet over low heat, swirling to coat. Crack eggs into the skillet, cover, and cook for 2 minutes until egg whites are mostly set. Remove from heat, keep covered, and let sit for 30 seconds to finish cooking.
  • To serve the waffles, generously drizzle honey on top of each waffle and crown with a perfectly fried egg.
